💡 There is nothing wrong with snacking...but if you're snacking on the wrong snacks, the lack of fiber and ultra-processed ingredients can add up and kick you in the a*s. These high-fiber chocolate peanut butter cups don't even come close to having any of those problems. Snack away! 

Chocolate Peanut Butter Cups Ingredients

For the Chocolate:

  • 9 oz chocolate chips (at least 70% cacao)
  • 9 oz coconut sugar chocolate chips (note: coconut sugar chocolate is loaded with fiber, but if you can't find it, double up on the regular chocolate chips)

For the peanut butter filling:

  • 1 C peanut butter powder
  • 1/4-1/2 C room temperature water

Topping:

  • Finish salt (optional)

Chocolate Peanut Butter Cups Directions

Step 1

Melt the chocolate either by using a double boiler on the stovetop, placing chopped chocolate in a heatproof bowl over simmering water, stirring frequently until melted, or microwaving in short bursts, stirring between each interval, ensuring not to overheat as chocolate burns quickly. Set aside. 

Step 2

Add peanut butter powder and 1/4 C of water to a mixing bowl. Mix until smooth, adding more water as needed. Set aside.

Step 3

To a cupcake pan/muffin tin, line the pan with cupcake papers. Add 2 tsp of chocolate to the bottom of the cups, 1 heaping teaspoon of peanut butter on top of the chocolate layer, and 1-2 teaspoons of chocolate on top of the peanut butter. Enough to cover the peanut butter. Give the pan a few gentle taps on the counter to flatten out the cups.

Step 4

Top with finishing salt and refrigerate for at least one hour to set. Store in a gallon freezer bag or individually wrap each cup if you feel like being extra. Bottoms up!
