💡 Before you say anything...corn gets a really bad rep, but in fact, corn is very high in fiber. Most people are aware of corn making a reappearance in the bathroom (sorry, but you know it's true) but that fact is one of corn's digestive super powers. Corn can be an excellent way to measure your unique gut motility, aka how long it takes for food to move from your mouth hole to your south hole. So it might be weird when you are literally faced with the corn you ate 24 hours before, but now you have a better understanding of how long your hawt body takes to digest food.

Avocado Corn Summer Salad Ingredients

  • 2 tbsp olive oil
  • 1 tbsp lime juice
  • Cilantro
  • Salt and Pepper
  • 1/2 BAG of corn, thawed
  • 3 avocados, pitted and cubbed
  • 16 oz cherry tomates halved

Avocado Corn Summer Salad Directions

Step 1

To a small bowl, whisk together the olive oil and lime juice until emulsified. Season to taste and set aside.

Step 2

To a medium mixing bowl, add the corn, cubbed avocado, cherry tomato halves, and chopped cilantro. Pour the dressing over the salad, toss, and chill in the fridge for at least an hour. Toss again before digging in!
